Sev Tametanu Saak (Sev Tomato Curry)

Tomatoes (finely chopped) - 2 cup,
Sev - 3/4 cup, Recipe of sev is posted here.
Oil - 2 tbsp,
Red chilli powder - 1 1/2 tsp,
Turmeric powder - 1/4 tsp,
Cumin & coriander powder - 1 tsp,
Jaggery - 1 tsp,
Curry leaves - 2-3,
Garam masala - 1 pinch,
Mustard seeds - 1/4 tsp,
Cumin seeds - 1/2 tsp,
Asafoetida - 1/8 tsp,
Water - 1 cup,
Coriander (finely chopped) - 1 tbsp.

Wash and chop tomatoes in small pieces. Heat oil in a sauce pan and add mustard seeds. Let it splutter. Add cumin seeds, asafoetida and fresh curry leaves.

Add chopped tomatoes followed by turmeric powder and salt.

Stir well and cover with plate. Cook in medium flame. Pour water in plate, this will make cooking process fast. It also helps to retain aroma as well as flavor of all ingredients.

Stir few times and add water gradually from the plate. Let tomato cooks properly.

Now add red chilli powder, coriander & cumin powder, jaggery and garam masala. Mix well.

Switch off the flame and add sev. Stir properly. Garnish with coriander and serve.

Add sev when you about to serve.
Sev has salt so add salt accordingly.
After adding sev, saak will become thick.
Jaggery can be replaced by sugar.
Adjust amount of water according to desire consistency.
Add Garlic and ginger paste if you wish.

Handvo, A Gujarati baked savory cake

Handva  flour - 1 1/2 cup (You will get Handva flour in any Indian grocery store. Its very easy to make it at home as well, Please take a look here),
Semolina (suji / rava) - 1/3 cup,
Yogurt - 1 cup,
Zucchini (shredded) - 1 cup,
Potato (shredded) - 3/4 cup,
Onion (shredded) - 3/4 cup,
Peas - 1/4 cup,
Peanut - 1/4 cup,
Ginger paste - 1 tsp,
Garlic paste - 1 tsp,
Green chilli paste- 1 tsp,
Turmeric powder- 1/2 tsp,
Salt - to taste,
Red chilli powder - 1 tsp,
Coriander & cumin powder - 1 tsp,
Garam masala powder - 1/2 tsp,
Rock salt (black salt) - 1/4 tsp,
Oil - 4-5 tbsp,
Sesame seeds -  2 tsp,
Mustard seeds- 1 tsp,
Cumin seeds - 1 tsp,
Asafoetida - 1/4 tsp,
Curry leaves (chopped) - 5-6.

1- Mix handva flour, semolina and yogurt in a mixing bowl. Let it rest for 1 hour least.

2 - Add zucchini, potato, onion, green peas, peanuts, ginger, jaggery, green chilli, ginger and garlic paste. Mix well.

3 - Add turmeric, red chilli, garam masala, cumin & coriander powder, salt, black salt and mix well.

4 - Heat 2 tbsp oil in a pan. Add chopped curry leaves on top and pour hot oil over it. Mix well.

5 - Add eno fruit salt on batter and pour lemon juice over it. Mix well.

6 - Grease muffin molds or baking tray liberally with oil. Fill greased pan with prepared batter. Sprinkle sesame seeds.

7 - In a pan heat oil. Add mustard seeds, cumin seeds, asafoetida and pour over batter in baking pan.

8 - Bake in preheated oven at 380 F for 15 minutes. Now lower the temperature to 360 F and bake for another 20 - 25 minutes.

9 - Poke a knife, if it comes clear, handva is done. Take it out from the oven and let it rest for 5-7 minutes. Serve warm.

Handva on Stove top
- Follow 1 - 5 step as mentioned above.
- Heat oil in a pan. Add mustard seeds, cumin seeds, asafoetida, curry leaves and sesame seeds.

- Now add prepared batter in that. let it cook covered for 10 minutes in low flame.

- After 10 minutes, flip the side using big spatula. Again cook covered until both sides turn light brown or cooks properly.

Eno fruit salt can be replaced by baking soda.
Zucchini can be replaced by bottle guard.
Peas can be replaced by fresh corn.
Handva mixture should be in dropping consistency not too thin.
Baking time may vary on different oven brands and size, so keep an eye on it while baking.

How to make Handva batter at home

Ingredients (For 6 servings)
Rice - 3/4 cup,
Split green gram (mung dal) - 2 tbsp,
Split Bengal gram (chana dal) - 2 tbsp,
Split black lentils (urad dal) - 2 tbsp,
Split pigeon peas (tur dal) -  2 tbsp.

Wash & soak rice and all dals/lentils for 6-8 hours. Drain water. Grind it in food processor or mixer jar using curd and enough water. Grind well until it get little thick and grainy consistency. Let it ferment overnight.

Gujarati kobi no sambharo, A stir fry cabbage & carrot

Cabbage (shredded/chopped) - 1/3,
Carrot (lengthwise chopped) - 1,
Green chilli (lengthwise chopped) - 1,
Oil - 1 tbsp,
Mustard seeds - 1/2 tsp,
Cumin seeds - 1/4 tsp,
Salt - To taste,
Turmeric powder - 1/8 tsp,
Sugar - 1/8 tsp,
Lemon juice - Few drops.

Wash carrot, cabbage and green chilli. Peel carrot and chop it along with cabbage and green chilli.

In a bowl, add chopped carrot, green chilli, cabbage, salt and turmeric powder.

In a pan heat oil. Add mustard seeds, cumin seeds and let it splutter. Add chopped cabbage, carrot, green chilli, salt, turmeric powder and mix well.

Cook for a minute or until cabbage cooks slightly. Switch off the flame. Add sugar and lemon juice. Mix well. Serve warm with your meal.

Sugar and lemon juice can be omitted.
Increase or decrease amount of cabbage, green chilli and carrot.

Mix fruit and cream delight, A yummy organic dessert !!!


Peach (chopped) - 3/4 cup,
Red pear (chopped) - 1/2 cup,
Kiwi - 1,
Cherries - 5,
Lychees - 5,
Plum - 1,
Apple (chopped) - 1/2 cup.

For cream
Heavy whipping cream - 1/2 cup,
Strawberries (chopped) - 3,
Sweeten condensed milk - 2 tbsp,
Strawberry jam - 1/2 tbsp (optional). Recipe of homemade organic strawberry jam posted here.

In a bowl add chopped strawberries along with condensed milk and puree it.

In a large mixing bowl, add whipping cream. Whip until stiff peak appears.

Now, add strawberry jam and prepared puree in whipped cream. Fold gently. Let it rest covered in refrigerator for 30 minutes.

Meanwhile wash, deseed and chop all the fruits in medium sized peaces.

Mix cream and chopped fruits gently with spatula and serve.

Ingredients used in this recipe are organic.
Condensed milk can be replaced by honey.
Whipped cream can be replaced by hung curd.
Any kind of fruits can be added or omitted.
Mix fruits and cream when you about to serve.

Organic Strawberry Jam, A delicious fruit spread

Strawberries (chopped) - 2 cup,
Brown sugar - 1/2 cup.

Wash and dry strawberries. Remove green top and chop finely.

In a pan add chopped strawberries and brown sugar. Mix well. Let it cook covered for 10-12 minutes in medium heat until strawberries looks soft and mushy. Make sure to stir in between.

Mash with potato masher. Cook uncovered in low flame until dropping consistency. Jam will become thicker once cool down.

Let it cool down completely. Store in airtight glass container in refrigerator upto 15 days.

Brown sugar can be replaced by white sugar for brighter color.
Add 1 tsp lemon juice if using white sugar.
Adjust sugar quantity according to taste.
