Gujarati Kobino Sambharo, A stir fry cabbage & carrot | ગુજરાતી કોબી - ગાજરનો સંભારો

Cabbage (shredded/chopped) - 1/3 or 2 cup ,
Carrot (lengthwise chopped) - 1,
Green chilli (lengthwise chopped) - 1,
Oil - 1 tbsp,
Mustard seeds - 1/8 tsp,
Cumin seeds - 1/4 tsp,
Salt - To taste,
Turmeric powder - 1/8 tsp,
Sugar - 1/8 tsp, (optional)
Lemon juice - Few drops (optional).

Wash carrot, cabbage and green chilli. Peel carrot and chop it along with cabbage and green chilli.

In a bowl, add chopped carrot, green chilli and cabbage.

In a pan heat oil. Add mustard seeds, cumin seeds, let it splutter. Add chopped cabbage, carrot, green chilli, salt and turmeric powder. Mix well.

Cook for 1 to 2 minutes or until cabbage cooks slightly over medium flame. Switch off the flame. Add sugar and lemon juice. Mix well. Serve warm with your meal.

Sugar and lemon juice can be omitted.
Increase or decrease amount of cabbage, green chilli and carrot.
Cabbage should remain little crunchy and not soft, so do not overcook.
