Chapdi Tavo, a traditional kathiawari dish





Chapdi is nothing but thick fried/baked bhakhri and tavo is a mix vegetable gravy with full of Indian spices.


Ingredients (6 servings
Chapdi:
    Wheat flour-2 cup,
    Semolina(suji/rava)-1/4 cup,
    Gram flour-1 tbsp,
    Salt-to taste,
    Warm water-3/4 cup,
    Oil-1/3 cup,
    Carom seeds(ajma)-1/8 tsp.
Tavo:
    Potato-1 medium size,
    Bottle gourd-1 cup (chopped in medium size pieces),
    Carrot-1/3 cup,
    Eggplant-1 medium size,
    Green peas:-1/2 cup,
    Garlic paste-1 tbsp+1/2 tsp,
    Ginger paste- 1 tsp,
    Green chili-2 (finely chopped),
    Onion-1 cup,
    Tomato puree-2 cups,
    Turmeric powder-1/2 tsp,
    Red chili powder-2 tsp,
    Cumin and coriander powder-2 tsp.
    Sugar-2 tsp,
    Garam masala powder-1 tbsp,
    Coriander-1 cup (finely chopped),
Tempering 1:
    Oil-1/4 cup,
    Cinnamon stick-1 small,
    Cloves-3,
    Bay leaf-1,
    Star anise-1,
    Asafoetida (hing)-1/8 tsp.
Tempering 2:
    Oil-2 tbsp,
    Red chili powder(degi/kashmiri chili) powder- 2 tsp,
    water-1/4 cup.

Method
Chapdi:
Mix flour,semolina,gram flour,salt,carom seeds and oil well, then sprinkle water enough to form into stiff dough. Divide into 6 equal balls and form a round shape (as i did) and prick them. Fry them in low to medium heat in oil and flip them in between while frying. Take them out in a paper towel.


Tavo:
In a pan, heat oil and add all the tempering items as per Tempering 1,  followed by onion and saute for a minute, add garlic, ginger, green chili paste and pinch of salt. Cook until raw flavor of ginger-garlic reduces and onion becomes translucent. Add tomato puree followed by turmeric, red chili, coriander & cumin powder, salt, and all the vegetables. Stir well. Add 3-4 cups water and cook covered in medium flame until vegetables are done (Keep stirring in between).


Tempering 2:
Mix water and chili powder and set aside. Heat oil in a pan and add prepared mix and cook for a while. Pour cooked mix in tavo followed by garam masala, sugar and 3/4 cup coriander. Let it simmer for 5-7 minutes.


Notes
Get organic ingredients if accessible.
Add or omit any vegetables of your choice.
Adjust the amount of oil and red chili powder according to your choice.


How to serve
Crush 1 chapdi in a plate & pour hot tavo on it. Mix well.
Enjoy the dish with buttermilk, roasted papad, lemon slice and any salad of your choice.
