Lasuni Gathiya/Bhujiya

Gram flour - 3 cup,
Salt - to taste,
Garlic powder- 1 tsp,
Asafoetida(hing) - 1/4 tsp,
Red chili powder- 4  tsp,
Cooking soda - 1/8 tsp,
Black salt - 1 tsp,
Water - less then 1 cup,
Oil - 1 tbsp for dough,
Oil - for frying.

In a large bowl add gram flour, salt, asafoetida(hing), garlic powder, red chili powder, black salt, cooking soda and 1/2 tbsp oil and mix well. Now add little water at a time to form a dough(chapati dough consistency). Let it rest covered for 5-10 minutes.


Now take gathiya maker machine and grease all the parts properly. Now take dough and add little water and make sticky dough, add 1/2 tbsp oil and make it smooth. Now fill the gathiya maker machine with dough and press in hot oil and form large circle. Do not make too many layers, two layers are appropriate. Fry in medium flame from both side till bubble disappears. Take it out in a paper towel using a tong.

You can skip garlic powder.
You can use fresh garlic paste in place of garlic powder.
You can decrees the amount of red chili powder.
Here I'm using kashmiri red chili powder for less heat and more color.
Store in airtight container or zip lock bag.
