Sev Bhujiya

Gram flour- 2 cup,
Salt - to taste,
Asafoetida(hing) - 1/8 tsp,
Cooking soda - 1/8 tsp,
Water - 1/3 cup,
Oil - 1 tbsp,
Turmeric powder - pinch,
Oil - for deep frying.

In a mixing bowl sieve gram flour if it has any lumps, followed by salt, asafoetida(hing), cooking soda and 1/2 tbsp oil and mix well.Add enough water to form dough(chapati dough consistency). Let it rest covered for 5-7 minutes.

Now take sev maker machine and grease all the parts properly. Now take dough and add little water. Make sticky dough and add 1/2 tbsp oil to make it smooth. Now fill the machine with dough and press in hot oil and form large circle. Do not make too many layers, two are appropriate. Fry in medium flame from both side till bubble disappears.Take it out in a paper towel using a tong.

You can add kashmiri red chili powder for spicy and  colorful sev.
You can add mint paste around 2 tbsp to add flavor and color.
Store in airtight container or zip lock bag.
