Sev | Plain Sev | સેવ

Ingredients
Gram flour- 2 cup,
Salt - to taste,
Asafotida(hing) - 1/4 tsp,
Cooking soda - 1/8 tsp,
Water - 1/2 cup + 1 tbsp,
Oil - 2 tsp,
Turmeric powder - pinch,
Oil - for deep frying.

 
Method
In a mixing bowl sieve gram flour followed by salt, asafoetida(hing), cooking soda and turmeric powder. Mix well. Add water gradually to form soft dough. Add oil and knead well. Let it rest covered for 10 minutes.

Now take sev maker machine and grease all the parts properly. Now take dough and add 1 tbsp water. Make thick paste consistency dough. Now fill the machine with dough and press in hot oildirectly and form large circle. Do not make too many layers, two are appropriate. Fry over medium high flame from both side till bubble disappears. It takes 2 minutes to fry from both the sides.Take it out in a paper towel using a tong.

                                                                                                                       
Let it cool down and store into an air tight container.

Notes
You can add kashmiri red chili powder for spicy and colorful sev.
You can add mint paste around 2 tbsp to add flavor and color.
Amount of water is depends on quality of gram flour.
