Tomatoes (finely chopped) - 2 cup,

Oil - 2 tbsp,
Red chilli powder - 1 1/2 tsp,
Turmeric powder - 1/4 tsp,
Cumin & coriander powder - 1 tsp,
Jaggery - 1 tsp,
Curry leaves - 2-3,
Garam masala - 1 pinch,
Mustard seeds - 1/4 tsp,
Cumin seeds - 1/2 tsp,
Asafoetida - 1/8 tsp,
Water - 1 cup,
Coriander (finely chopped) - 1 tbsp.
Wash and chop tomatoes in small pieces. Heat oil in a sauce pan and add mustard seeds. Let it splutter. Add cumin seeds, asafoetida and fresh curry leaves.
Add chopped tomatoes followed by turmeric powder and salt.
Stir well and cover with plate. Cook in medium flame. Pour water in plate, this will make cooking process fast. It also helps to retain aroma as well as flavor of all ingredients.
Add sev when you about to serve.
Sev has salt so add salt accordingly.
After adding sev, saak will become thick.
Jaggery can be replaced by sugar.
Adjust amount of water according to desire consistency.
Add Garlic and ginger paste if you wish.
