Handvo in 3 ways - in kadai, on tawa and in oven(baked)| હાંડવો 3 રીતે - કડાઈમાં, તવા ઉપર અને અવનમાં

Handva  flour - 1 1/2 cup (You will get Handva flour in any Indian grocery store. Its very easy to make it at home as well, Please take a look here),
Semolina (suji / rava) - 1/3 cup,
Yogurt - 1 cup,
Zucchini  or bottle gourd (shredded) - 1 cup,
Potato  or carrot (shredded) - 1/2 cup,
Onion (shredded) - 1/2 cup,
Peas - 1/4 cup,
Peanut - 2 tbsp,
Ginger paste - 1 tsp,
Garlic paste - 1 tsp,
Green chilli paste- 1 tsp,
Turmeric powder- 1/2 tsp,
Salt - to taste,
Red chilli powder - 1 tsp,
Coriander & cumin powder - 1 tsp,
Garam masala powder - 1/2 tsp,
Rock salt (black salt) - 1/4 tsp,
Oil - 4-5 tbsp,
Sesame seeds -  2 tsp,
Mustard seeds- 1 tsp,
Cumin seeds - 1 tsp,
Asafoetida - 1/4 tsp,
Curry leaves (chopped) - 5-6.

1- Mix handva flour, semolina and yogurt in a mixing bowl. Let it rest for 1 hour least.

2 - Add zucchini, potato, onion, green peas, peanuts, ginger, jaggery, green chilli, ginger and garlic paste. Mix well.

3 - Add turmeric, red chilli, garam masala, cumin & coriander powder, salt, black salt and mix well.

4 - Heat 2 tbsp oil in a pan. Add chopped curry leaves on top and pour hot oil over it. Mix well.

5 - Add eno fruit salt on batter and pour lemon juice over it. Mix well.

6 - Grease muffin molds or baking tray liberally with oil. Fill greased pan with prepared batter. Sprinkle sesame seeds.

7 - In a pan heat oil. Add mustard seeds, cumin seeds, asafoetida and pour over batter in baking pan.

8 - Bake in preheated oven at 365 F for 30 to 35 minutes.  Broil till it gets golden brown color on top.

9 - Poke a knife, if it comes clear, handva is done. Take it out from the oven and let it rest for 5-7 minutes. Serve warm.

- Follow 1 - 5 step as mentioned above.
- Heat oil in a pan. Add mustard seeds, cumin seeds, asafoetida, curry leaves and sesame seeds.

- Now add prepared batter in that. let it cook covered for 8 to 10 minutes on low flame.

- After 8 to 10 minutes, flip the side using spatula. Again cook covered until both sides turn light brown or cooks properly.

Eno fruit salt can be replaced by baking soda.
Zucchini can be replaced by bottle guard.
Peas can be replaced by fresh corn.
Handva mixture should be in dropping consistency not too thin.
Baking time may vary on different oven brands and size, so keep an eye on it while baking.
