Jaggery Sweet Rice | Meetha Bhat | ગોળવાળા મીઠા ભાત

Basmati rice - 1 cup,
Jaggery - 2/3 cup,
Clarified butter - 2 tbsp,  For home made organic clarified butter recipe CLICK HERE.
Cashew halves - 2 tbsp,
Cloves - 2,
Cinnamon - 1 inch piece,
Cardamom (slightly crushed) - 3,
Sliced dry coconut - 2 tbsp,
Peanut - 2 tbsp,
Raisins - 2 tbsp,
Hot water - 2 to 2 1/4 cup.

Wash and rinse basmati rice for 2 - 3 times.

Soak with enough water for 1 hour.

In a pressure cooker, heat clarified butter over medium flame.

Add cloves followed with cinnamon, crushed cardamom, cashew halves, sliced dry coconut, peanut, and raisins.

Roast till they slightly turns golden color.

Now add soaked and drained basmati rice. Mix well. Roast well for few minutes.

Now add hot water followed with jaggery. Dissolve jaggery well.

Cover the lid and let it cook over medium to medium low flame for 2 - 3 whistle.

Let pressure cooker cools down completely. Open lid and serve warm.

Basmati rice can be replaced with any available rice.
Soak basmati rice for minimum 30 minutes.
Adjust amount of ingredients as per taste.
Amount of water depends on quality of rice.
Cooking time may vary as per cooking vessels.
jaggery can be replaced by brown sugar.
Cloves, cinnamon, cardamom, sliced dry coconut, peanut, raisins and cashew can be omitted.
Almond, dry dates can be added for more flavour.
