GARLIC CHUTNEY IN 3 WAYS | કાઠીયાવાળી લસણ ની ચટણી - 3 રીતે


Ingredients
FOR BASE CHUTNEY
Garlic - 1/4 cup,
Salt - to taste,
Cumin seeds - 1/8 tsp,
Red chilli powder - 1 tbsp,
Kashmiri red chilli powder - 1 tbsp.

FOR STIR FRY CHUTNEY
Peanut oil - 1 1/2 tbsp,
Asafetida - 1/8 tsp,
Prepared base chutney - 1 tbsp,
Salt - to taste.

FOR SWEET & SOUR CHUTNEY
Prepared base chutney - 1 tbsp,
Jaggery - 1 1/2 tsp,
Lemon juice - 1/2 tsp,
Salt - to taste.


Method
FOR BASE CHUTNEY
In mortar, add peeled garlic followed with cumin seeds and salt.


Crush well using pastel.


Add red chilli powder and kashmiri red chilli powder. Again crush well with pastel.


Take out in a bowl. This chutney is basically use in the process of making curry.


FOR STIR FRY CHUTNEY
In a pan, heat oil over medium low flame. Add asafetida followed with prepared basic garlic chutney.


Stir and cook well for 2 - 3 minutes.


Remove from the heat.



This chutney can be enjoyed with KHATA DHOKLA,  METHI NA DHEBRA,  METHI NA THEPLA etc.

FOR SWEET & SOUR CHUTNEY
In a mixing bowl, add prepared basic garlic chutney followed by jaggery, lemon juice and salt.


Mix well.


This chutney can be enjoyed with roti,  METHI NA THEPLA, parotha, etc.


Notes
Adjust amount of ingredients as per taste.
Basic chutney can be made in mixer grinder.







KAVO | કાઠીયાવાળી કાવો | GUJARATI KAVO

Ingredients
Water - 1 1/2 cup,
Fresh mint leaves- 12 - 15,
Ginger (grated) - 1 tsp,
Black pepper powder - 1/4 tsp,
Coffee powder - 1/2 tsp,
Black salt - 3/4 tsp,
Lemon juice - 1 tsp.


Method
In a saucepan, add water. Turn on the flame to medium high.


Add grated ginger, black salt, fresh mint leaves, black pepper powder and coffee powder. Bring it to boil. Let it boil for 5-6 minutes.


Turn off the flame and remove from heat. Add lemon juice. Mix well.


Strain prepared tea using strainer.


Notes
Adjust amount of ingredients as per taste.
Add or omit any ingredients as per like.

INSTANT LASANIYA GAJAR | GARLICKY CARROT PICKLE

Ingredients
Carrot - 4-5,
Garlic paste - 3/4 tsp,
Oil - 1 tsp,
Salt - to taste,
Red chilli powder - 1 tsp,
Coriander leaves (finely chopped) - 1tbsp.





Method
Wash an dry carrots well.



Peel off the skin.



Cut into 1 1/2 to 2 inch long pieces.


Cut each part into two and remove middle part.


Cut each half into long strip.



Transfer into a mixing bowl.



Add garlic paste, oil, salt, red chilli powder and finely chopped coriander.



Mix well.
