Dudhi/Lauki Halwa

Grated Dudhi (bottle guard) - 2 cup,
Cashews (chopped) - 1/4 cup,
Clarified butter (ghee) - 1-2 tsp,
Heavy whipping cream - 1/2 cup,
Sugar - 1/3 cup,
Whole milk - 1 cup,
Almonds - for garnishing(optional).

Heat ghee in a pan. Roast chopped cashew in ghee till turns in to golden brown color.

Remove in a plate and keep aside.

In the same pan with rest of the ghee, add grated bottle gourd. Saute it for few minutes till water from bottle gourd evaporates in some extent.

Now add milk and heavy whipping cream. Let it come to a boil.

Lower the flame and keep stirring in between to prevent sticking. Cook in low flame till milk evaporates completely and grated bottle gourd cooks properly.

Add sugar and mix well.

Keep cooking and stirring continuously till mixture turns thick and lumpy. Switch off the flame and add fried cashew. Mix well. Serve warm or chilled.

Heavy whipping cream can be replace with whole milk.
Store in refrigerator for 3-4 days.
Amount of sugar depends on your taste.
Sugar can be replaced with condensed milk.
Cardamom powder can be added for more flavor.

No Bake Chocolate Mousse Cake

Chocolate cookies/ biscuits - 10-12,
Heavy whipping cream - 1/2 cup,
Milk chocolate chips - 1/2 cup,
Melted butter - 1 1/2 tbsp,
Raspberry - 1 pkt (for topping).

For crust
Place cookies in food processor or mixer grinder and crush till turns in to fine crumbs. Transfer prepared crumbs in a bowl and stir in melted butter. Mix till well combined.

Transfer prepared mixture in greased spring form pan. Level it up using spoon or spatula.
Keep in refrigerator for half an hour.

For mousse
In a pan, heat heavy whipping cream till small bubbles appears in sides of the pan.

Remove pan from the heat and add chocolate chips. Cover the pan and let it rest as it is for 2-3 minutes.

After 2-3 minutes, mix well till chocolate melts properly. Now cover with clean plastic wrap and refrigerate for 2-3 hours till set. After 2-3 hours, take it out from the refrigerator and whip till stiff peak appears.

For cake
Fill prepared chocolate mousse over the crust in spring form pan.

Arrange raspberry on top of the mousse. Let it set in refrigerator for 3-4 hours or overnight.

Prepare individual servings in cupcake molds or shot glasses.
Run a warm knife over the edge of the cake to remove cake easily.
Chocolate biscuits can be replaced with any digestive biscuits.
Milk chocolate in mousse can be replaced with dark or white chocolate.
Raspberry can be replaced by any other berries like strawberry.

Pani Puri, A delicious Indian fast food.

( 10 serving)

For puri

For stuffing
Boiled potato - 3 medium,
Boiled black chickpeas (kala chana) - 1 cup,
Onion (finely chopped) - 1 cup,
Garlic paste - 1 tsp,
Coriander (finely chopped) - 3 tbsp,
Red chilli powder - 1 tbsp,
Black salt - 1 tsp,
Chat masala powder - 1 tsp,
Slat - to taste.

For pani
Green chutney - 1/3 cup, for the recipe of Green chutney, click here.
Pani puri masala - 3 tsp,
Salt - to taste,
Black salt - 1/2 tsp,
Water - 2 cup,
Roasted cumin powder - 1/4 tsp,
Red chilli powder - 1/4 tsp (optional).

In a mixing bowl, add all the ingredients listed under " For stuffing " section above.

Mix well and keep aside.

In another mixing bowl, add all the ingredients listed under " For pani " section above. Mix well.

How to serve
Take puri and crack top with thumb.
Fill prepared potato stuffing into the puri.
Sprinkle some chat masala on top (optional) and serve with prepared pani.

How to eat
Take puri and crack top with thumb.
Fill puri with prepared potato stuffing followed by pani.

Adjust amount of green chutney in pani as per your taste.
Adjust amount of seasoning as per your taste.
Boiled black chickpea can be replaced by steamed green gram sprouts.
Adding garlic paste in potato filling is optional.
