Khichdi |Kathiawari Khichdi | Plain Khichdi | Dal & Rice Khichdi


For Khichdi Mix
Rice - 2 cup,
Broken wheat - 1 cup,
Split green gram - 2 cup,
Split pigeon peas - 1/2 cup.

For Khichdi (Serving - 4)
Prepared khichdi mix - 1 cup,
Water - 3 to 4 cup,
Salt - as per taste,
Turmeric powder - 1/2 tsp,
Asafetida - 1/8 tsp,
Clarified butter - 2 tsp. For organic clarified butter recipe - Click Here.

For khichdi mix
In a large mixing bowl, add all the ingredients listed under the header of "For Khichdi Mix" above.

Mix well. Store into a container and use as per need.

For Khichdi
Take one cup of prepared khichdi mix. Wash and rinse well for couple of times.

In a pressure cooker, add water followed with washed and rinsed khichdi mix, salt, turmeric powder, asafetida and clarified butter. Consistency of khichdi is depending on quantity of water you add, so add accordingly. Add 3 cup if you like khichdi with little firm texture and 4 cup for smooth texture. Mix well.

Cover the lid of pressure cooker. Let it cook over medium flame for 4 to 5 whistles.

Now let pressure cooker cools down completely. Open the lid. Mix well.

Serve with 1 teaspoon clarified butter on top for better taste.

Adjust amount of ingredients as per taste.
Broken wheat and split pigeon peas can be skipped.
Split green gram can be replaced with skinned and split green gram.
Broken wheat gives nice texture to khichdi while split pigeon peas gives smoothness in khichdi.
Turmeric powder and asafetida can be skipped in khichdi making process.
Clarified butter can be replaced with oil.
Amount of water depends on quality of rice and lentils.
Cooking time may vary due to quality of rice and lentils as well as size of pressure cooker.
This is plain khichdi, Serve with yogurt or curry.
