Bharela Karela Nu Shak | Stuffed Bitter Gourd Curry

Karela (bitter guard) - 5,
Salt - 1 tbsp (to sprinkle over).

Coriander(finely chopped) - 1/2 cup,
Roasted peanut (roughly crushed) - 1/4 cup,
Sev (roughly crushed) - 1/4 cup, For home made sev recipe, click Here.
Garlic paste - 1 tsp,
Ginger paste - 1/2 tsp,
Salt - to taste,
Jaggery - 1 1/2 tbsp,
Red chilli powder - 2 tbsp,
Turmeric powder - 1/2 tsp,
Oil - 1 tsp,
Salt - to taste.
Coriander & cumin powder - 2 tbsp.

Oil - 2 tbsp,
Cumin seeds - 1/4 tsp,
Asafoetida - 1/8 tsp,
Tomato puree - 1/2 cup.

Wash karela well and trim top and bottom part. Roughly peel the skin off from karela.

Cut karela into 2 inch long pieces and give a slit without breaking into pieces.

Sprinkle salt into the slit and steam boil karela till it gets well cooked. Now run cold water through karela so that salt can be removed and bitterness can be reduced by some extent. Remove seeds from karela as per the image given below.

Now in a mixing bowl, add all the ingredients listed under the header " Stuffing " section above.

Mix well.

Stuff all the karela pieces with prepared stuffing.

Heat oil in a pan and add cumin seeds, let them crackle.

Now add asafoetida followed by tomato puree and rest of the stuffing.

Give it a stir and cook for 2-3 minutes on low to medium flame till oil oozing out.

Now add all stuffed karela. Mix well with gentle hand.

Cook covered for 4-5 minutes on low to medium flame. Remove in a plate and serve.

Jaggery can be replaced by brown sugar.
Roasted gram flour works well in place of sev.
Amount of spices can be vary as per taste.
Roasted peanuts and sev can be skipped.
