Bharela Karela Nu Shak | Stuffed Bitter Gourd Curry | Bharwa Karela


Ingredients
Karela (bitter gourd) - 5,
Salt - to sprinkle .

Stuffing
Coriander(finely chopped) - 1/2 cup,
Roasted peanut - 1/4 cup,
Bhavnagari gathiya 1/2 cup, For home made bhavnaga
Sesame seeds - 1 tbsp,
Dry coconut (shredded) - 1 tbsp,
Garlic paste - 1 tbsp,
Ginger paste - 1 tsp,
Salt - to taste,
Jaggery - 1 - 1 /12 tbsp,
Red chilli powder - 1 1/2 tbsp,
Turmeric powder - 1/4 tsp,
Oil - 1 tbsp,
Salt - to taste,
Garam masala - 1/8 tsp,
Lemon juice - 1 tsp,
Coriander & cumin powder - 1 1/2 tbsp.

Tempering
Oil - 3 - 4 tbsp,
Cumin seeds - 1/4 tsp,
Asafetida - 1/8 tsp.
 



Method
Wash karela well and trim top and bottom part. Roughly peel the skin off from karela.


Cut karela into 2 - 2 1/2  inch long pieces and give a slit without breaking into pieces.


Sprinkle salt into the slit and steam boil karela till it gets well cooked. Now run cold water through karela so that salt can be removed and bitterness can be reduced by some extent. Remove seeds from karela as per the image given below.



 In  a mixer grinder jar, add salted peanuts followed with bhavnagari gathiya, sesame seeds, shredded dry coconut, garlic and ginger. Grind coarsely. In a mixing bowl, add crushed mixture followed with coriander, red chilli powder, coriander & cumin powder, salt, turmeric powder, garam masala, lemon
   juice, jaggery and peanut oil. 
 

Mix well.


Stuff all the karela pieces with prepared stuffing.

 


Heat oil in a pan and add cumin seeds, let them crackle.


Now add asafetida followed with stuffed karela.

 
Cook for 10 - 12 minutes over medium to medium low flame.  Flip karela in between to cook evenly. Sprinkle remaining stuffing over karela. Mix well. Let it cook for a minute and remove from the heat.

Notes
Jaggery can be replaced by brown sugar.
Roasted gram flour works well in place of bhavnagari gathiya.
Amount of spices can be vary as per taste.
Roasted peanuts and bhavnagari gathiya can be skipped.
