Masala Chana Dal Chaat


Split Bengal gram(chana dal) - 1 cup,
Peanut oil - for frying.

Red chilli powder - 1 tsp,
Dry mango powder(amchur) - 1 tsp,
Salt - 3/4 tsp or to taste,
Black salt(sanchar) - 1/2 tsp,
Chat masala - 1/2 tsp,
Garam masala - 1/2 tsp,
Powdered sugar - 1/8 tsp.

Masala Dal Chaat
Onion (finely chopped) - 2 tbsp,
Tomato (finely chopped) - 2 tbsp,
Raw mango (finely chopped) - 2 tbsp,
Fresh coriander (finely chopped) - 1 tbsp,
Fresh mint (finely chopped) - 1 tsp,
Green chilli (finely chopped)- 1 tsp,
Lemon juice - 1/4 lemon.

Wash and soak chana dal for overnight or 8-10 hours with enough water.

After 8- 10 hours, drain all the water from dal with the help of colander.

Spread soaked and drained dal in a kitchen towel for 10 - 12 minutes.

Heat oil in a pan and deep fry dal over medium flame. Fry till dal starts to float on top.

Remove in a bowl. Fry all dal in batches.

Now add all the spices listed under the header of " Spices " section above. Mix well. Let it cool down completely and store in airtight container up to 20 - 25 days.

To make Masala dal chat
In a mixing bowl add all the ingredients listed under "Masala Dal Chaat " section above along with 1 cup prepared masala chana dal. Mix well and serve. Mix chaat ingredients only when you are about to serve to maintain dal's crunchiness.

Adjust amount of spices as per taste.
Add or omit any ingredients for masala dal chat.
