Caramelized makhana | jaggery makhana | ગોળવાળા મખાના | Gud makhana | Sweet makhana | Crunchy caramel makhana

Fox nuts - 2 cup,
Jaggery - 1/4 cup,
Clarified butter - 2 tsp + 1/4 tsp, For homemade organic clarified butter recipe click here.
Vanilla extract - 1/4 tsp.

Heat a pan over medium low flame. Add 2 tsp clarified butter followed with fox nuts.

Keep roasting for 6 to 8 minutes till it becomes crispy.

Remove roasted fox nuts into a bowl and set aside.

In same pan, add jaggery along with 1/4 tsp clarified butter. 

On low to medium flame allow jaggery to melt completely. Stir constantly to prevent jaggery from burning. Check the consistency of jaggery by dropping couple of jaggery drops into cold water. Remove jaggery drop from water and check, it should be crunchy to break. If drop is not crunchy but chewy, then cook further to get right consistency.

Add vanilla extract and mix well.

Now add roasted fox nuts. Mix well till each fox nut gets well coated with jaggery.

Now transfer onto the greased baking mat. With the help

of fork, loosen prepared fox nuts, as per given below image.

Baking mat can be replaced with greased working surface or greased tray.
Jaggery can be replaced with brown sugar or sugar.
Add or omit any nut of your choice.
Adjust amount of jaggery and nut as per your taste.
Vanilla extract can be replaced with cardamom powder.
