Dates & Nut Laddoo with Edible Gum | Khajoor and dryfruit ladoo | ખજૂર - ડ્રાયફ્રુટ- ગુંદરના લાડુ | khajoor ladoo | Dryfruits ladoo

Dates (pitted & chopped) - 1 1/2 cup,
Cashew (roughly chopped) - 2 tbsp,
Almonds (roughly chopped) - 2 tbsp,
Pistachio (roughly chopped) - 2 tbsp,
Walnut (roughly chopped) - 2 tbsp,
Ghee (clarified butter) - 3 tbsp, For homemade organic clarified butter recipe click here.
Edible gum - 1 tbsp,
Desiccated coconut - as per need.

Chop dates in small pieces or crush in a food processor.

Heat 2 tbsp ghee in a pan. Add edible gum and fry over medium heat. Take out in a bowl and keep aside.

In the same pan, add 1 tbsp ghee. Roast chopped cashew, almond, pistachio and walnut over low to medium flame till it gets light brown color. Now add chopped dates. Mix well. Keep cooking and stirring for 6 - 8 minutes over medium low flame till dates looks mushy and soft..

Now transfer cooked mixture in a plate. Let it cool down to warm. Add fried edible gum and mix well.

Take small amount of mixture (1 tbsp) and roll out in round shape ball with palm. Repeat the process with remaining mixture.

Roll in desiccated coconut.

Use any kind of nut as per choice.
Add  pinch of cardamom powder for better taste.
Process of rolling ladoo in desiccated coconut is optional.
