Dates & walnut cake (Vegetarian) | ખજૂર અને અખરોટની કેક(શાકાહારી) | Date -walnut cake

Dates (pitted+chopped) - 1 cup,
Milk - 1 cup + 2 tbsp,
Walnut (roughly chopped) - 1/2 cup,
Cashew (roughly chopped) - 1/3 cup,
All purpose flour - 1 1/4 cup,
Condensed milk - 1/2 cup, For homemade condensed milk recipe, click here.
Milk powder - 3 tbsp (optional),
Vanilla extract - 1/2 tsp,
Baking soda - 1 tsp,
Baking powder - 1/2 tsp,
Butter(at room temperature) - 1/2 cup,
Vinegar - 1 tsp.

Chop dates and walnut into pieces and keep aside.

Grease baking pan or line with parchment paper.

Heat milk in a pan and bring it to boil.

Switch off the flame and add chopped dates. Mix well and let it rest covered for 15 - 20 minutes.

After 15 - 20 minutes, roughly crush dates and milk mixture using hand blender or mixer grinder.

Sieve all purpose flour along with baking powder, baking soda and milk powder in a bowl. Keep it aside.

In a large mixing bowl, add butter along with condensed milk and vanilla extract. Beat till it gets well mix.

Now add date & milk mixture into the butter & condensed milk mixture. Mix it well.

Now slowly fold in all sieved flour mixture in prepared wet mixture.

Now fold in chopped walnuts and cashews, keep some aside for sprinkle on top.

Add vinegar and again mix well.

Transfer the mixture in to the greased baking pan. Dip spatula in cold water and level the mixture.

Sprinkle remaining walnut on top.

Bake the mixture in preheated oven at 350 F for 45 to 50 minutes till pricked knife comes clear from cake.

Cashew nut can be skipped.
Adjust amount of walnut as per like.
Amount of condensed milk depends on sweetness of dates.
I have used 8 * 8 inch baking pan.
Pinch of salt can be added.
Oven temperature may vary for different made/types of oven, so keep eye on it while baking.
