Chana dal namkeen & chaat | ચણાની મસાલા દાળ અને ચાટ | Namkeen chana dal | Fried chana dal | Spicy snack recipe

Ingredients
Split Bengal gram(chana dal) - 1 cup,
Cooking soda - 1 tsp
Water - as per need,
Peanut oil - for frying.
Spices
Red chilli powder - 1 tsp,
Dry mango powder(amchur) - 1 tsp,
Salt - 3/4 tsp or to taste,
Black salt(sanchar) - 1/2 tsp,
Chat masala - 1/2 tsp,
Garam masala - 1/2 tsp,
Powdered sugar - 1/8 tsp.
Masala Dal Chaat
Onion (finely chopped) - 2 tbsp,
Tomato (finely chopped) - 2 tbsp,
Raw mango (finely chopped) - 2 tbsp,
Fresh coriander (finely chopped) - 1 tbsp,
Fresh mint (finely chopped) - 1 tsp,
Green chilli (finely chopped)- 1 tsp,
Lemon juice - 1/4 lemon.


Method
Wash chana dal well. Soak with enough water and cooking soda for overnight or  8-10 hours.


After 8- 10 hours, drain all the water from dal. Wash well for couple of times and drain excess water with the help of colander.


Let it dry on kitchen towel 10 - 12 minutes. this process helps to soak excess water from dal which prevents sticking while frying.


Heat oil in a pan over medium flame. Deep fry dal till dal becomes crispy and golden color.


Remove in a bowl. Fry all dal in batches.


Now add all the spices listed under the header of " Spices " section above. Mix well. Let it cool down completely and store into an airtight container up to 20 - 25 days.

To make Masala dal chat
In a mixing bowl add all the ingredients listed under "Masala Dal Chaat " section above along with 1 cup prepared masala chana dal. Mix well and serve. Mix chaat ingredients only when you are about to serve to maintain dal's crunchiness.


Notes
Adjust amount of spices as per taste.
Dal turns hard after frying if you do not add baking soda in soaking process.
Add or omit any ingredients for masala dal chaat.
