Whole wheat & Flax seed bread

Ingredients
Whole wheat flour - 3 cup,
All purpose flour - 1 cup,
Milk - 2 cup,
Dry yeast -  1 1/2 tbsp,
Salt - 1 1/2 tsp,
Sugar - 3 tbsp,
Olive oil - 3 tbsp,
Flax seed meal (powdered flax seed) - 1 tbsp,
Water - 3 tbsp,
Milk - 1 tbsp (for brushing),
Flax seeds - 1/2 tsp(to sprinkle over bread).




Method
In a bowl, add warm milk followed by sugar and dry yeast. Mix well and let it rest covered for 10 minutes in warm place.




In another small bowl, add flax seed meal and water(3 tbsp). Mix well and let it rest for 5-8 minutes.



Meanwhile in a large mixing bowl, add whole wheat flour, all purpose flour and salt. Mix well.


After 10 minutes yeast should be risen well as per below image.


Slowly starts stir in proofed yeast mixture and flax seeds meal mixture into flour mix.


Now start to form sticky dough. Add more milk if required, dough should be sticky as seen per below image.

Kneadthe dough for 12 - 15 minutes till it gets smooth texture. Add oil in between kneading.



Now transfer the dough into lightly greased bowl and cover with a lid or kitchen towel. Lightly brush water all over dough to prevent  from drying.

Let it rest as it is in warm place for about an hour. After an hour, dough should have been double in size.

Remove the dough on lightly floured surface. Gently knead the dough till you get smooth and non sticky dough.

To form smooth and non sticky dough, add little flour at a time, it took me 2-3 tbsp flour. Roll out  dough into a big rectangle shape and fold as per below image.



Don't forget to tuck sides and pinch seam along edge of dough.



Arrange loaf in a greased baking tray, pinched side down.


Give loaf a milk wash using brush. Sprinkle some flax seeds on top.



Let it rest covered with kitchen towel in warm place for an hour. After proofing, bake in preheated oven at 375 F for about total 35 minutes.


After 15 minutes, cover the bread with the foil to prevent getting extra dark on top and continue baking.


Take it out and lightly brush butter on top to give shine. Transfer it on wire rack and let it cool down to room temperature. Cut into slices and serve.



Notes
Amount of milk may vary with the quality of flour.
Olive oil can be replaced by butter.
Milk can be replaced with water.
Sugar can be replaced with maple syrup.
To prepare flax seed meal, grind flax seed in mixer grinder to fine powder.
